One cup of dried cereal (1/4 (4 oz.) of a pound) will make about 3 - 4 cups of cooked cereal.

½-1 cup makes a good serving.

Leftover cereal can be refrigerated and reheated in a microwave.

Fresh cracked grains should be use with 2 weeks of purchase.



Step 1
The ratio is 1 part cereal to 2 parts water.
Step 2
Soak overnight, this allows naturally occurring yeast and bacteria to break down the ant-nutrients and carbohydrates (you might notice a slight sour taste to the finished cereal). You can add some dried fruit to the soaking grain, increase the water proportionally (1/4 fruit to 1/2 - ¾ of a cup of water).
Step 3
The next morning, add some cinnamon/nutmeg/allspice about 1-3 teaspoons (to taste) per cup (4 oz) of dried cereal. Add salt to taste, about ½-1 teaspoon per cup of dried cereal.
For a change try adding flax seed, quinoa, dried fruit or nuts. Increase the water accordingly at about 1:2 ratio.
Step 4
Bring the mixture to a slight boil and reduce to low. Add water as needed to maintain the desired consistency.
Step 5
Cook 5 to 10 minutes. At the end add some milk, honey, or fresh fruit.
